THE CHEF
ALESSANDRO ROSSI
Former Michelin-starred chef
Born on April 20, 1991 in Chiusi, in the province of Siena, he grew up with the ambition of becoming a chef. After completing his hospitality studies in Chianciano Terme (SI) at the renowned Pellegrino Artusi Institute, he immediately began working. First with Filippo Germasi at the Zafferano restaurant in Città della Pieve (PG), where he deepened his knowledge of Umbrian and Tuscan culinary traditions, and then with Stefano Ciavatti, the “mad genius” of seafood cuisine. Following a brief experience with Alessandro Dal Degan in Asiago, he felt it was time to return to his homeland. He became head chef of the Leggenda dei Frati restaurant and a business partner of Filippo Saporito, initially at the San Giovanni d’Asso (SI) location and later at Villa Bardini, in the heart of Florence. There, he learned to understand Tuscan ingredients in every smallest detail and to transform them into a narrative on the plate, conveying emotions, memories, and the culture of the land.
This was confirmed by the Michelin Star, awarded in 2016 at Villa Selvato in Roncade (TV), when Alessandro was just 25 years old. In June 2020, the chef arrived in Marina di Grosseto at the Gabbiano 3.0 restaurant, where he once again confirmed his talent and retained the Michelin Star.
Today he is the executive chef of the Barbagianni restaurant in Colle di Val d’Elsa, in the province of Siena, where he pursues a contemporary Tuscan cuisine focused on dialogue between the garden, the territory, and the culture of both the inland areas and the Tyrrhenian coast.
