During the dinner you will have the possibility to choose which label to taste from a wide selection of Piedmontese wines. A food and wine itinerary to discover the precious Doc and Docg wines of Piedmont.

The AIS Sommelier will advise and guide in the choice between sparkling, white, red and aromatic wines.

THE CHEF

Eugenio Boer was ‘’born in Italy by mistake’’ on the 8th of May 1978, he is half Italian and half Dutch, and he grew up in Holland, in Voorburg util the age of 7, when his family moved to Italy in Sestri Levante (GE) to follow the father, who was agent of commerce. Then, he continued his discovery of the Italian regions, which was characterized by a very strong gastronomic tradition until arriving in South Tyrol, in St. Hubertus, by Norbert Nederkofler, in 2011. He arrived in Milan where he started a pioneering project focused on natural wine: Enocratia. Later, the lucky encounter with Stefano Saturnino leads him to open the Fishbar de Milan, an innovative, smarter, young and affordable concept of restaurant. After one year he dedicated himself to consulting, in December 2014 he opens Essenzia, which

leads him to get his first Michelin Star in November 2017. In June 2018 he opens his restaurant called [bu:r], whose name clarifies any doubt about the pronunciation of the Chef’s surname.
