During the dinner you will have the possibility to choose which label to taste from a wide selection of Piedmontese wines. A food and wine itinerary to discover the precious Doc and Docg wines of Piedmont. The AIS Sommelier will advise and guide in the choice between sparkling, white, red and aromatic wines.


THE CHEF

Chef Stefano Sforza, born in 1986, offers a clean, precise, and well defined in taste cuisine. By following the philosophy of the restaurant, where ‘removing’ is always a better than ‘adding’ (as taught by the Master Gualtiero Marchesi) his cuisine is candid and clean, without too many frills. According to him it is easier to put extra ingredients to give a complexity which is not required, than leaving only the simple and well-studied flavours to make a great dish, which is a skill of a few. Stefano’s cuisine is made of territoriality, innovation and concreteness and his menu changes according to the seasonality of the products he uses. Even before cooking, he learned rigor, respect and discipline from his Masters as Pier Bussetti and Alain Ducasse. After more than 15 years of experience at Bellevue of Cogne, Del Cambio in Turin, Trussardi at La Scala in Milan and at Turin Palace, he marries the project of Cometto family and arrives at Opera Restaurant in Turin as the executive Chef. Here he proposes the menu à la carte, two other menus, one of which is vegetarian, where Stefano shows his predilection for vegetables and plays with cooking and textures, and a menu called ‘Opera’, in which guests are guided by the Chef and his creativity that expresses the essence of the restaurant.

During the dinner it will be possible to choose which label to taste from a wide selection of Piedmontese wines, in a wine and food journey to discover the fine Doc and Docg denominations of Piedmont.
